1.准备好食材,面粉提前过筛。

9.用刮刀挑起滑落的面糊呈倒三角形就可以了。

10.然后做酥皮面团,把黄油室温软化后加入糖粉用电动打蛋器打发。

11.筛入低筋面粉。

12.加入适量斑斓油搅拌成光滑的面团。

13.取两张油纸把酥皮面团放在中间擀成薄片后放冰箱冷冻至硬。

14.泡芙面糊装入剪了口的裱花袋。

15.在铺了油纸的烤盘里挤出大小合适的圆形,一共可以挤出来10个左右。

16.取出冻硬的酥皮用圆形小慕斯圈切出圆形快速取掉盖在泡芙面糊上。

17.速度要快,因为酥皮很容易变软拿不起来,需要再次冻硬,全部盖上酥皮后预热烤箱。

18.泡芙放入预热好的烤箱先17度烤20分钟左右,然后降低到140度烤60分钟。

19.奶油加糖粉打发。

20.奶油装入裱花袋,巧克力隔热水融化。

小窍门&温馨提示
中间尽量不开烤箱,温度不均匀烤的时候很容易塌下去,或者烤的时间不够也会塌下去,酥皮还会很容易往下掉,彻底烤干定型后不但不会扁酥皮也没有那么容易掉了,用手轻轻压一下顶部硬了就烤好了。
